Egg Fried Rice

Serves: 4

Ingredients

  • 3 Tbsp cooking oil
  • 2 green onions, chopped
  • 3 eggs, beaten
  • 4 cups cooked rice, room temperature
  • 1/2 cup frozen peas and carrots, thawed
  • 1/2 tsp salt
  • 1 Tbsp soy sauce

Directions

  1. Heat 3 tablespoons oil in a wok over high heat.
  2. In a bowl, combine green onions and eggs together. Add mixture to wok and stir for 10–20 seconds.
  3. Add rice, peas, and carrots and stir together with eggs for 2 minutes or until rice is heated through. Season with salt and soy sauce.
