Egg Fried Rice
Ingredients
- 3 Tbsp cooking oil
- 2 green onions, chopped
- 3 eggs, beaten
- 4 cups cooked rice, room temperature
- 1/2 cup frozen peas and carrots, thawed
- 1/2 tsp salt
- 1 Tbsp soy sauce
Directions
- Heat 3 tablespoons oil in a wok over high heat.
- In a bowl, combine green onions and eggs together. Add mixture to wok and stir for 10–20 seconds.
- Add rice, peas, and carrots and stir together with eggs for 2 minutes or until rice is heated through. Season with salt and soy sauce.
