French Onion Soup Pastina
Ingredients
- 1 cup Pastina
- 1 Yellow Onion
- 1/2 cup Parmesan
- 1/2 cup Gruyere Cheese
- 2 tsp Worcestershire Sauce
- 2 Cloves Garlic
- 2 Tbsp Butter
- 2 Tbsp Olive Oil
- 1/4 tsp Thyme
- 3 1/2 cups Beef Stock
- 1/4 cup Cooking Wine
Directions
- Add 1/2 of butter and olive oil to stainless steel pan
- Add thinly sliced onions to pan
- Caramelize onions, adding water as necessary
- Add Thyme and grated garlic clove to pan, cook until garlic is fragrant
- Add cooking wine to deglaze pan
- Add pastina and toast for 3-6 minutes
- Add beef stock and simmer for 10 minutes or until pasta is tender
- Turn off heat and add remainder of butter, cheese, salt and pepper
- Garnish with additional Gruyère and serve
