French Onion Soup Pastina

Ingredients

  • 1 cup Pastina
  • 1 Yellow Onion
  • 1/2 cup Parmesan
  • 1/2 cup Gruyere Cheese
  • 2 tsp Worcestershire Sauce
  • 2 Cloves Garlic
  • 2 Tbsp Butter
  • 2 Tbsp Olive Oil
  • 1/4 tsp Thyme
  • 3 1/2 cups Beef Stock
  • 1/4 cup Cooking Wine

Directions

  1. Add 1/2 of butter and olive oil to stainless steel pan
  2. Add thinly sliced onions to pan
  3. Caramelize onions, adding water as necessary
  4. Add Thyme and grated garlic clove to pan, cook until garlic is fragrant
  5. Add cooking wine to deglaze pan
  6. Add pastina and toast for 3-6 minutes
  7. Add beef stock and simmer for 10 minutes or until pasta is tender
  8. Turn off heat and add remainder of butter, cheese, salt and pepper
  9. Garnish with additional Gruyère and serve

Double recipe is best if you want leftovers
