Hashbrown Waffles

Serves: 4

Ingredients

  • 1 lb potatoes, shredded
  • 3-4 large eggs
  • 5 oz cheddar or Monterey Jack, shredded
  • 4-5 strips bacon, cooked and crumbled
  • 1-2 tbsp chives, finely chopped
  • 3 tbsp cornstarch
  • Salt, pepper, garlic powder, and onion powder to taste
  • White gravy for topping

Directions

  1. Shred potatoes using a food processor with a shredding wheel or cheese grater
  2. Place shredded potatoes in a kitchen towel, cheesecloth, or hand press to squeeze out as much liquid as possible
  3. In a large bowl, combine dry potatoes, eggs, cheese, bacon, chives, cornstarch, and seasonings
  4. Mix thoroughly until cornstarch is fully incorporated
  5. Place mixture in waffle iron and cook until golden brown and crispy
  6. Serve topped with white gravy

Notes

Food processor with a shredding wheel produces a consistent texture that works well for these waffles
