Hashbrown Waffles
Ingredients
- 1 lb potatoes, shredded
- 3-4 large eggs
- 5 oz cheddar or Monterey Jack, shredded
- 4-5 strips bacon, cooked and crumbled
- 1-2 tbsp chives, finely chopped
- 3 tbsp cornstarch
- Salt, pepper, garlic powder, and onion powder to taste
- White gravy for topping
Directions
- Shred potatoes using a food processor with a shredding wheel or cheese grater
- Place shredded potatoes in a kitchen towel, cheesecloth, or hand press to squeeze out as much liquid as possible
- In a large bowl, combine dry potatoes, eggs, cheese, bacon, chives, cornstarch, and seasonings
- Mix thoroughly until cornstarch is fully incorporated
- Place mixture in waffle iron and cook until golden brown and crispy
- Serve topped with white gravy
