Honolulu Chicken

Ingredients

  • 4 Boneless Skinless Chicken Thighs
  • 3/4 cup Soy Sauce
  • 1 cup Brown Sugar
  • 1/3 cup Chicken Stock
  • 1/2 cup Ketchup
  • 2 Tbsp White Vinegar
  • 2 1/2 Tbsp Ginger
  • 6 Cloves Garlic
  • Sesame Seeds
  • 2 Green Onions

Directions

  1. Cut chicken into small 1/2 inch pieces
  2. Mix all sauce ingredients
  3. Reserve 1/4 cup of sauce
  4. Add chicken and allow to marinate 4 hours to overnight
  5. Heat a pan over medium heat
  6. Add chicken to pan with a slotted spoon, allowing excess marinade to drain off
  7. Add an additional 1-2 tbsp of chicken marinade to pan if needed
  8. Cook in pan, stirring occasionally to prevent burning until chicken is brown, temps 165 degrees and sauce has reduced and thickened
  9. Serve over rice with green onions and sesame seeds

Notes

Serves two people with no leftovers (1 1/2 cup Jasmine rice)
