Honolulu Chicken
Ingredients
- 4 Boneless Skinless Chicken Thighs
- 3/4 cup Soy Sauce
- 1 cup Brown Sugar
- 1/3 cup Chicken Stock
- 1/2 cup Ketchup
- 2 Tbsp White Vinegar
- 2 1/2 Tbsp Ginger
- 6 Cloves Garlic
- Sesame Seeds
- 2 Green Onions
Directions
- Cut chicken into small 1/2 inch pieces
- Mix all sauce ingredients
- Reserve 1/4 cup of sauce
- Add chicken and allow to marinate 4 hours to overnight
- Heat a pan over medium heat
- Add chicken to pan with a slotted spoon, allowing excess marinade to drain off
- Add an additional 1-2 tbsp of chicken marinade to pan if needed
- Cook in pan, stirring occasionally to prevent burning until chicken is brown, temps 165 degrees and sauce has reduced and thickened
- Serve over rice with green onions and sesame seeds

Serves two people with no leftovers (1 1/2 cup Jasmine rice)
