Lobster Pasta
Ingredients
- 2 Lobster Tails
- 1 Bunch Parsley
- 1 Shallot
- 1 Lemon
- 1 Can Tomato Paste
- 1 Onion
- 1 Bunch Celery
- 2 Cloves Garlic
- 2 Bay Leaves
- 3 Cups Water
- 2/3 Cup Heavy Cream
- 1 Pinch Salt
- 2 Tbsp Olive Oil
- 1 Cup White Wine
- Fresh Pasta
Directions
- Boil pot of water
- Add lobster tails to boiling water for 5 minutes
- Remove to ice bath when finished cooking.
- Remove tails from shells and chop into 1/2 chunks
- Place large drizzle of olive oil in pan. Once heated, add lobster shells and cook 2-3 minutes
- Add roughly chopped onions, carrots, and celery then cook for another 2-3 minutes
- Add parsley, bay leaves, and fill with 3-4 cups of water
- Cover with lid and cook for 10-15 minutes and then salt to taste
- Strain broth into a large bowl
- Heat large pan with large drizzle of olive oil
- Add shallots and garlic. Cook for 2-3 minutes until fragrant
- Add lobster meat, 2 cups of broth, a handful of rough chopped parsley and the juice of half a lemon
- Cook for 2-3 minutes until bubbling
- Add in heavy cream and mix until well combined
- Simmer for 10 minutes
- Cook the pasta until al dente
- Add pasta to sauce. Add splash of pasta water if sauce is too thick
- Simmer until sauce coats pasta then remove from heat and serve
