Lobster Pasta

Ingredients

  • 2 Lobster Tails
  • 1 Bunch Parsley
  • 1 Shallot
  • 1 Lemon
  • 1 Can Tomato Paste
  • 1 Onion
  • 1 Bunch Celery
  • 2 Cloves Garlic
  • 2 Bay Leaves
  • 3 Cups Water
  • 2/3 Cup Heavy Cream
  • 1 Pinch Salt
  • 2 Tbsp Olive Oil
  • 1 Cup White Wine
  • Fresh Pasta

Directions

  1. Boil pot of water
  2. Add lobster tails to boiling water for 5 minutes
  3. Remove to ice bath when finished cooking.
  4. Remove tails from shells and chop into 1/2 chunks
  5. Place large drizzle of olive oil in pan. Once heated, add lobster shells and cook 2-3 minutes
  6. Add roughly chopped onions, carrots, and celery then cook for another 2-3 minutes
  7. Add parsley, bay leaves, and fill with 3-4 cups of water
  8. Cover with lid and cook for 10-15 minutes and then salt to taste
  9. Strain broth into a large bowl
  10. Heat large pan with large drizzle of olive oil
  11. Add shallots and garlic. Cook for 2-3 minutes until fragrant
  12. Add lobster meat, 2 cups of broth, a handful of rough chopped parsley and the juice of half a lemon
  13. Cook for 2-3 minutes until bubbling
  14. Add in heavy cream and mix until well combined
  15. Simmer for 10 minutes
  16. Cook the pasta until al dente
  17. Add pasta to sauce. Add splash of pasta water if sauce is too thick
  18. Simmer until sauce coats pasta then remove from heat and serve
