Pasta Dough

Ingredients

  • 2 1/2 cups 00 flour
  • 1 tsp salt
  • 1 tbsp olive oil
  • 4 eggs

Directions

  1. Add flour and salt to food processor and pulse to combine
  2. With processor running, add oil and eggs one at a time
  3. Process until dough comes together into a ball
  4. Turn out onto a floured surface and knead briefly until smooth
  5. Wrap in plastic wrap and rest at room temperature for 30 minutes
  6. Divide into portions and roll out thin with a pasta machine or rolling pin
  7. Cook in salted boiling water for about 5 minutes until al dente
