Wonton Soup

Serves: 8

Ingredients

  • 1 package wonton wrappers
  • 8 cups chicken stock
  • 2 tsp sesame oil
  • 1 Tbsp soy sauce
  • 1 bunch spinach or bok choy, trimmed
  • 2 stalks scallions, finely chopped
  • Sea salt, to taste
  • Freshly ground white pepper

Filling

  • 1/2 lb ground pork
  • 5 oz peeled shrimp, finely chopped
  • 2 stalks scallions, finely chopped
  • 1 tsp minced fresh ginger
  • 1 Tbsp cornstarch
  • 1/4 tsp white pepper
  • 1/4 tsp sea salt
  • 1 tsp sesame oil
  • 1 Tbsp soy sauce

Flour Paste

  • 1/4 cup flour
  • 1/2 cup water

Directions

  1. Combine the wonton filling ingredients and mix well. Let stand for 25–30 minutes.
  2. Place stock, sesame oil, and vegetables in a pot and bring to a boil. Salt and pepper to taste.
  3. Mix together flour and water to make a paste. Place about 1 to 1½ tsp of filling in the center of the wrapper. Seal the edges of the wrapper with paste and wrap the wonton. Add to soup as you make them. Simmer until wontons are translucent.
  4. Ladle into bowls and serve immediately.
